Món cá kho là món ăn quá quen thuộc với nhiều gia đình. Cá có thể kho với dưa cải muối chua, kho với tiêu hay kho với tương bần… Nhưng khi nói cá kho mía thì chẳng có gì lạ lẫm với những người dân miền quê. Những nguyên liệu đi kèm đơn giản như mía, gừng là đã mang đến một hương vị tươi mới hơn cho món cá.
Cá cạo bỏ vảy, mổ bỏ ruột, rửa sạch lại cá rồi cắt khúc vừa ăn. Ướp cá với hạt nêm, bột ngọt cho ngấm gia vị. Mía bỏ vỏ, chặt khúc dài cỡ ngón tay, chẻ mía làm 4. Gừng rửa sạch thái sợi.
Cho nửa thìa đường vào nồi cùng với 1 thìa dầu ăn, đun cho đến khi đường tan và chuyển màu vàng cánh gián thì cho gừng vào đảo thơm. Vặn nhỏ lửa, xếp mía xuống đáy nồi. Tiếp đó cho cá đã ướp lên trên, đun khoảng 1 phút.
Thêm lượng nước vào nồi xâm xấp mặt cá. Bạn đun sôi nồi cá rồi vặn nhỏ lửa đun liu riu cho đến khi nước trong nồi cạn và cá chín là được. (Nếu có thời gian bạn nên kho cá 2 lần sẽ ngon hơn nhé).
