Cá ba sa nhờ người bán làm sạch ruột và vây trước nên khi mua về chỉ cần cắt khúc rồi đem rửa sạch máu nữa là được. Ướp cá với 30ml rượu nấu ăn, 1/2 muỗng cà phê muối, 1 muỗng canh nước sốt hải sản, 30ml nước tương, 15ml hắc xì dầu, 15g nước sốt hàu, 1 muỗng cà phê tiêu trắng xay trong hơn nửa giờ.
Hạt đậu nành lông đem chần qua nước sôi khoảng 5 phút. Khoai tây gọt vỏ và cắt nhỏ. Tỏi bóc vỏ. Gừng cắt lát mỏng.
Đun nóng 30ml dầu ăn, cho tỏi và gừng vào đảo nhanh tay. Tiếp đến thêm khoai tây và hạt đậu nành vào, đảo đều 1-2 phút. Xếp cá đã ướp lên trên. Dội thêm nước ướp cá và chút nước. Đậy nắp nồi, đun sôi khoảng 5 phút. Sau đó rắc thêm ít hành lá thái nhỏ vào rồi đậy nấp đun tiếp 5 phút nữa là cá chín.
